In order to identify the potential sources of natural polyphenols and free radical scavenging activities, the edible seeds of methanolic extracts of Ocimum sanctum seed were studied for total phenolic and flavonoid contents, scavenging of free radicals of DPPH, Nitric oxide, super oxide, hydroxyl and hydrogen per oxide. Polyphenol and flavonoid content were observed sufficient amount in ocimum sanctum seed. The DPPH inhibitory and Nitric Oxide (NO) radical scavenging activities measured in-terms of their IC50 was 63.18μg/ml and 138.88μg/ml respectively. Other radicals like superoxide, hydroxyl and hydrogen peroxide scavenging activities were measured in-terms of IC50 value of 53.73μg/ml, 50.70μg/ml and 52.56μg/ml respectively.Keywords

The best gift of a mother to her baby is breast milk. The breast feeding practices vary among different regions. Hence the present cross sectional study was conducted among the rural young mothers to evaluate their knowledge about the advantages of breast feeding and to study their breast feeding and sanitary practices. This study was conducted among 150 women living in 9 villages of Bargur taluk who were selected using convenience sampling method with the inclusion criteria that they were 18 to 25 years old, married and having at least one 1 to 5 years old child. A pretested schedule was used to collect data regarding their general information, knowledge about breast feeding and their breast feeding and sanitary practices. Though all the selected rural mothers were having poor socio economic status, they had a good knowledge about the advantages of breast feeding and correct breast feeding practices. Because of the good sanitary habits of the mothers, their children did not suffer from any infectious diseases for the past fifteen days.Keywords

Premna serratifolia (also known as Pachumullai) belongs to the family Verbenaceae, is a medicinal plant known as Agnimantha in Ayurveda. It has potential hepatoprotective and cytotoxic activity. There are many phytochemical and bioactive compounds present in the plant parts of Premna serratifolia. In addition to this, it has higher antioxidant and antimicrobial activity which is beneficial to human health as a therapeutic adjuvant. However, the nutritional components in P. serratifolia have not been probed, though it was consumed during special rituals. Further the anti-anemic effect of P. serratifolia was not yet studied. The present research aimed at assessing the micronutrients (Iron, Phosphorus, Calcium, Ascorbic acid) in P. serratifolia leaf, and the ethanolic extract of P. serratifolia leaf at two different dosage (100mg and 200mg) was examined for hematological parameters (Hemoglobin, Red Blood Cell count and Mean Corpuscular Hemoglobin) in anemic rats and the value added snacks like biscuit, vadam and murukku were formulated at two different ratios by using P. serratifolia leaf powder. The results showed that P. serratifolia leaf extract had higher impact on the hematological parameters when compared with standard drug ferrous fumarate and the higher incorporation of P. serratifolia leaf powder helped to increase the nutrient content in formulated snacks.

Diabetes mellitus is one of the most common metabolic disorders in India. It is estimated that by the year 2025, there will be 57 million people with diabetes in India. Present study is undertaken to evaluate antidiabetic activity of ethanolic extract of Solanum nigrum seed in experimental rats in two dosages of 250mg and 500mg compared with control and standard glibenclamide drug. After 21 days, ethanolic extract of seeds of Solanum nigrum showed a significant fall in blood sugar level than the standard drug. Further breakfast recipes using Solanum nigrum seed powder was formulated and evaluated organoleptically by 20 semi trained panels. Among the recipes banyard millet was highly acceptable.Keywords

Yoghurt is a cultured milk product obtained by lactic acid fermentation through the action of Lactobacillus bulgaricus and Streptococcus thermophilus and resulting in reduction of pH with coagulation. Minor millets are cited as important addendum for major cereals. The pearl millet is nutritionally superior to major cereal crops with respect of energy value, proteins, fat and minerals. Blending of millet grains or their milling fractions combined with other treatment is one of the most convenient techniques to produce food products with high nutritional value and functionality and to promote their utilization in a large range of food products. Hence the present study was done to formulate and evaluate standardized yoghurt with incorporation of pearl millet extract at 10%, 20% and 30% respectively and to assess the organoleptic, physiochemical and microbiological values of highly acceptable value enriched yoghurt stored in various containers. Results showed that 10% pearl millet extract incorporated yoghurt stored in plastic container secured high scores in organoleptic evaluation. Shelf life evaluation showed that the microbial load was within the limit as per FSSAI standards in both standard and millet extract enriched yoghurt stored in plastic container and in mud pot.Keywords

The health of postmenopausal women especially living in rural areas is neglected. A cross sectional study was conducted among 45 to 70 years old postmenopausal women living in Barugur Taluk of Tamil Nadu, India, using a pretested, structured questionnaire with an objective of identifying the postmenopausal women with poor health and nutritional status. Majority of the selected women were 45 to 50 years old (40%) and illiterates (87.45%). More than 60 percent of them had ≥ 3 children. More than 90 percent were non vegetarians and 80.39 percent of them were taking tea. Nearly 25 percent of them were overweight or obese and only 35.29 percent had normal Hemoglobin. TBF (%) and VF (%) were above normal for 20.83 percent and 18.18 percent of the selected women respectively. The W/H ratio of 65.28 percent showed central obesity. The blood pressure and blood sugar level was high for 11.8 percent and 19.44 percent of the women respectively. The nutritional and health status of the selected postmenopausal women were poor. Special health camps can be conducted in rural areas to identify the women who are at risk of malnutrition and at risk of developing MS.

Balloon Vine Cardiospermum halicacabum (Sapindaceae) is a woody perennial fast growing vine distributed almost globally in the tropics. The ischolar_mains, leaves, stem, and seeds of this plant are employed as herbal medication. Significance of balloon vine and nutritional status was carried out in selected menopause women in the age group of 40-60 years. Positive correlation between waist hip ratio and fat intake of the selected menopausal women with arthritis was noted. The present study also revealed dietary inadequacy among the selected menopausal women particularly energy, calcium and iron. Therefore, it is necessary to identify the inadequacy of food intake among menopausal women which help plan and implement healthy choice of eating especially calcium rich foods given through proper nutrition education during pre and post-menopausal period.

Chickpea is considered as healthy vegetarian food due to its beneficial nutritional profile and medicinal properties. Coffee consumption does not always provide protective benefits because over drinking is associated with negative impact or risk on our health. Coffee consumption reduces appetite levels for food, increases serum cholesterol, cause insomnia and restlessness, breast tissue cysts in women, incontinence digestive disorders, less hearing loss improvement and risk of headaches. To avoid health risks of coffee and to overcome addiction from coffee, roasted chickpea can be used as a substitute to caffeinated coffee. Hence the present study was done to formulate roasted chickpea powder and evaluating its physicochemical properties, nutrient content, over all acceptability of chiffee (chickpea coffee) made by different methods compared with standard coffee and to assess the shelf life of chiffee powder. Results showed that chiffee prepared by filter method was highly acceptable and statistical analysis did not show significant difference for boiling and filter method chiffee. Percolated chiffee shows significant difference at 5% level when compared with standard coffee. Shelf life evaluation showed that microbial load was within the safe limit up to 35 days.Keywords

Breastfeeding is a fundamental pillar of child nutrition, with important implications for the health welfare due to its impact on morbidity and mortality, especially among children under one year of age. The process of secretion and production of milk in alveolus of breast after the birth of child is called lactation. Therefore, many use galactagogues to increase the milk production. Galactagogue helps in increasing the prolactin hormone levels. The present study was aimed the with objective to formulate galactagogue rich recipes and to access the knowledge on galactagogue and create awareness to pregnant and lactating women using developed aids. The study was carried out on 25 lactating women using interview schedule to assess their nutritional status, knowledge of breastfeeding practices and awareness of galactagogues. Galactagogue rich recipes such as galacta paratha, galacta tea, galacta pancake and galacta omelette were organoleptically evaluated by the 25 lactating women. Among the four galactagogue rich recipes galacta paratha received highest score and hence variations are shown. The nutrient content of the formulated galacta paratha (100g) was found to be 221.82 kcal of energy, 9.08g of protein, 4.78g of fat, 2.69mg of iron, 65.85mg of Calcium, 77.23μg of vitamin A, 5.38g of fibre and 35.20g of carbohydrates which indicates that galacta paratha was highly nutritious compared to other galactagogue rich recipes. Nutrition education and awareness program were given to pregnant and lactating women in groups using pamphlets and a 5-day menu was designed especially for lactating women. This study concluded that majority 60% of selected lactating women were not aware of the term galactagogues and about 60% of the selected lactating women experienced that their feeding pattern increased much after following prescribed menu. About 60% of the mothers breastfed their infant directly, 20% of them feed with the help of pumped milk and 20 % of them breastfed both directly and by use of pumped milk.Keywords
